Tuscan Bean Salad

A tasty, satisfying way to fill about a third of your daily fiber goal.


3 15-ounce cans cannellini beans, drained and rinsed
7 tablespoons Lemon Vinaigrette (*see below)
1 1/2 cups coarsely chopped red onion
2 large ripe tomatoes, coarsely chopped
1/2 cup chopped celery
3/4 cup coarsely chopped fresh flat-leaf parsley

Arrange beans in a shallow salad bowl and toss with 2 tablespoons of the lemon vinaigrette.  Chill.  Just before serving, toss beans with tomatoes, celery, parsley and remaining 5 tablespoons of vinaigrette.  8 servings.

*  Lemon Vinaigrette
2 garlic cloves, minced
3 tablespoons fresh lemon juice
1/4 cup extra-virgin olive oil
3/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper

Combine all ingredients in a jar with lid.  Shake well until blended.
