Five-Star Marinara Sauce

A combination of good taste and good health!

2 tablespoons olive oil
2 cups finely chopped yellow onion
3 garlic cloves, minced
1 28-ounce can plum tomatoes, including liquid, diced
4 cups water
1 6-ounce can tomato paste
2 tablespoons chopped fresh basil
3/4 teaspoon oregano
1/2 teaspoon coarse salt or to taste
1/4 teaspoon coarsely ground fresh pepper

Heat olive oil in a nonstick skillet over medium heat.  Add onion and cook 8 to 10 minutes, or until translucent.  Add garlic and cook 2 to 3 minutes longer.

Heat tomatoes and remaining ingredients over medium-high heat in a large saucepan.  Add onion and garlic.  Reduce heat and simmer 1 hour.  Makes 2 quarts.

Sodium Alert:  Be sure to eat lower-sodium foods throughout the day to balance the sodium in the marinara sauce.
