Sauteed Spinach with Pine Nuts

A wonderful side dish.

1 teaspoon extra-virgin olive oil
2 pounds fresh spinach, trimmed
2 tablespoons pine nuts
pinch coarse salt
pinch freshly ground black pepper

Heat olive oil in a non-stick skillet.  Add spinach and cook over medium-high heat about 3 to 5 minutes, or just until wilted.  Sprinkle wit pine nuts.  Season with salt and pepper.
