Roasted Herbed Turkey Breast

Buy the biggest turkey breast available and serve this dish as an entree.  Use any leftover turkey for lunch-box sandwiches the rest of the week.

3 pounds fresh turkey breast
extra-virgin olive-oil cooking spray
2 heaping tablespoons fresh rosemary
2 heaping tablespoons chopped fresh sage
salt
pepper
paprika

Spray turkey breast on both sides with olive-oil spray, about 5 seconds or until coated.  Rub turkey with rosemary and sage.  Sprinkle lightly with salt, pepper and pinch of paprika for color.  Position turkey breast on a rack in a roasting pan.  Roast at 325 degrees F. for 1 1/2 hours, or until juices have no trace of pink; a meat thermometer should register 170 degrees F.
Serves 8.
