You recently spoke in Sioux City, Iowa. My husband and I attended and enjoyed your informative talk. My question -- you made a comment about preferring the use of "real" eggs versus egg beaters. My husband loves eggs and he does limit himself to 3 or 4 per week (poached). I have been using egg beaters for an occasional veggie omelet and in some baking and wonder why you prefer real eggs over egg beaters.

I don't have anything against Egg Beaters from a health standpoint, it's more a question of preferred taste. I simply like eggs better than egg substitute.
