Poached Pears with Raspberry Puree

A wonderfully refreshing dessert!

2 cups dry white wine
2 1/2 cups water
1 cinnamon stick
1 vanilla bean
zest of 1 lemon
4 firm, ripe pears
1 cup Raspberry Puree (see previous recipe)

In a deep saucepan, combine wine, water, cinnamon stick, vanilla bean and lemon zest.  Bring to a boil.  Peel Pears, leaving stems intact.  Gently drop pears into poaching liquid, adding water or wine, if necessary, to completely cover the fruit.  Cover and simmer 25-30 minutes, or until pears are tender.  Remove from heat.  Cool pears in the poaching liquid until ready to serve.

Serve pears on deep-lip dessert plates.  Pour 1/4 cup of Raspberry Puree over each pear.

Serves 4.
