Pan-Seared Tuna

Jun. 15, 2009 at 2:17pm

How easy is this?  Five to six minutes from start to finish!

1 bunch fresh cilantro
juice of 2 limes
1 pound tuna steaks
2 teaspoons extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 lemon, cut into wedges

Shred 1/2 cup of cilantro leaves and combine with lime juice; set aside.

Rub tuna steaks on both sides with 1 teaspoon olive oil; season with salt and pepper.  Heat remaining teaspoon of olive oil in a nonstick skillet or grill pan until very hot but not smoking.
Add tuna steaks and cook over high heat 2 to 3 minutes on each side, or until fish flake easily.  (Reduce heat a notch if pan begins to smoke during cooking.)  Serve on a bed of cilantro.
Spoon cilantro-lime sauce over top of tuna.  Garnish with lemon wedges.  4 servings.
