Italian Vinaigrette

This tried-and-true recipe was passed down from Joe's mother, who learned it from her mother, who learned it from...

3/4 cup extra-virgin olive oil
1/4 cup cider vinegar
3/4 cup coarse salt
1/4 teaspoon freshly ground black pepper

Combine all ingredients in a jar with a lid.  Shake until blended well.  Makes 1 cup.
