Hickory-Smoked Salmon

A summer favorite...and healthy too!


3 cups hickory chips
1 pound salmon steaks
1 teaspoon olive oil
1 bunch fresh spinach
1/2 lemon, cut into wedges
1/2 lime, cut into wedges

Soak hickory chips in water about 1 hour.  Drain thoroughly.  Prepare coals and cover the grill with foil.

Rub salmon with olive oil.  When coals are ready, sprinkle hickory chips over the coals.  (The hickory will smoke for about 15 minutes, so put the salmon on at once.)  Cook salmon on the grill 10 minutes per inch of thickness of fish.  If grill has a lid, keep it closed during cooking.

Line platter with spinach leaves.  Arrange cooked salmon on top.  Garnish with lemon and lime wedges.
