Grilled Swordfish with Garlic and Ginger

Get your omega-3 fatty acids in this delicious recipe.

1/4 cup fresh lemon juice
grated zest of 1 lemon
1/4 cup rice vinegar
2 tablespoons reduced-sodium soy sauce
2 tablespoons chopped garlic cloves
1 tablespoon peeled and minced fresh ginger
1/4 cup chopped cilantro
1 pound swordfish steaks
2 cups Pico de Gallo (see below)

Combine lemon juice, lemon zest, vinegar, soy sauce, garlic, ginger and cilantro.  Pour over swordfish.  Marinate 30 minutes.

Grill swordfish over hot coals about 10 minutes per inch of thickness of fish.  Serve with Pico de Gallo.  4 servings.


Pico de Gallo
1 1/4 cups finely chopped ripe tomatoes
1/2 cup finely chopped white onion
1 jalapeno pepper, seeded and finely chopped
1/3 cup finely chopped cilantro
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt

Just before serving, combine tomatoes, onion, jalapeno, cilantro and lime juice.  Season with salt.  Makes 2 cups.
