This variation on the classic Bolognese sauce has been passed down in our family through several generations.
1 tablespoon olive oil
1 yellow onion, coarsely chopped
10 garlic cloves, minced
1 cup sliced fresh mushrooms
1 pound extra-lean ground beef, shaped into a large patty
1 28-ounce can plum tomatoes, including liquid, diced
1 tablespoon dried basil or 1/4 cup chopped fresh
3/4 teaspoon oregano
3/4 teaspoon coarse salt
1/4 teaspoon coarsely ground fresh pepper
1/4 teaspoon crushed red pepper flakes
Heat olive oil in a nonstick skillet over medium heat. Add onion and saute 8 to 10 minutes, or until translucent. Add garlic and mushrooms; saute 2 to 3 minutes longer.
Add whole patty of ground beef and saute 3 to 4 minutes; turn and saute 3 to 4 minutes longer, keeping patty whole as long as possible. Add diced canned tomatoes, basil, oregano, salt, black pepper and red pepper flakes. Reduce heat and simmer 1 hour. (The meat will start to just fall apart on its own.) Stir gently to mix. Makes 8 servings.
