Bran Muffins

A healthy version of everybody's favorite muffin!

1 cup whole-wheat flour
1/2 cup enriched white flour
1/2 cup oatmeal
2 teaspoons baking soda
dash salt
1/2 cup wheat bran
1 cup raisins
1 egg
1/2 cup canola oil
1 cup skim milk
1/4 cup honey

In a large bowl, combine flours, oatmeal, baking soda, salt, wheat bran, raisins and egg.  In a separate bowl combine oil, milk and honey; add to flour mixture.  Blend with a wooden spoon.  Pour 1/4 cup batter into each paper-lined muffin cup.  Bake at 400 degrees F for 12 to 15 minutes.  Makes 14 muffins.

Note:  A single bran muffin is not a nutritional powerhouse.  Pair it with 1/2 cup cottage cheese and 1/2 cup fresh pineapple or a peach for a healthy breakfast.
