Three-Bean Soup

Low in fat, high in fiber and delicious on a winter night.  And, preparing a hearty bean soup doesn't have to be a time-consuming effort if you start with canned beans.


2 cups macaroni
1 28-ounce can plum tomatoes, diced
1 tablespoon chili powder
1/8 teaspoon ground cumin
1/8 teaspoon cayenne
1/2 teaspoon paprika
1/2 teaspoon coarse salt
1/8 teaspoon pepper
2 15-ounce cans cannellini beans, drained and rinsed
1 15-ounce can red pinto beans, drained and rinsed
2 15-ounce cans black beans, drained and rinsed

Cook macaroni 15 to 20 minutes, or until al dente.  Meanwhile, combine tomatoes, chili powder, cumin, cayenne, paprika, salt and pepper.  Heat to just boiling; reduce heat and simmer 20 minutes.  Add beans and pasta, and heat through.  Makes 3 quarts.
