Asian-Style Seafood

A tasty way to get your omega-3's!
1 pound fillet of sole, cod, turbot, halibut or other whitefish
6 tablespoons sake
3 tablespoons ginger juice*
3 tablespoons lemon juice
Dash of salt
6 fresh shiitake mushrooms
1 to 2 fresh lemons, cut into wedges
* To make ginger juice, puree a 2 1/2-inch piece of peeled fresh ginger in a food processor; squeeze the pulp to obtain ginger juice.
Divide fish into 4 servings. Place each portion on a piece of aluminum foil; fold edges of foil upward to make a bowl. Cover each fillet with a generous amount of sake, ginger juice, lemon juice, and a dash of salt. Top with 1 to 2 mushrooms. Pinch top edges of foil together to seal, leaving a small amount of space between top of fish and top of foil. Place in 350 degree F oven and steam for 20 minutes, or until done. Garnish with fresh lemon.
Note: Shiitake mushrooms can usually be found in Asian markets or the Asian food section of your grocery store. If fresh are unavailable, reconstitute dried shiitake mushrooms by soaking them in water for 30 minutes, or until soft. Serves 4.
